What is an aebelskiver?

An aebelskiver is a traditional Danish pancake. It consists of a batter lightened with whipped egg whites and fried in a spherical shape. This results in a light, airy treat often dusted with powdered sugar.

WHY DO WE CALL OURSELVES ALICE'S AEBELSKABELS?

"Aebelskabel" is the phonetic spelling of our family's historic mispronunciation of the name of this treat. Our founder, Hilary Meilen, started this food truck in Columbus in 2015 and now has relocated home to the Danish town of Solvang, CA. The recipe we use today was handed down through Hilary's family from her grandmother, Alice Sorensen. In fact, Alice's pan is still used on the food truck!
